Apple Salad

Can you believe it's already April - this year is flying by!

I wanted to share a recipe that is SO good and easy. We've been making this for a little while now, but my mom made it this week, and I remembered just how great it is. It sounds weird and looks weird, but it tastes SO good - and I'm even a picky eater. Plus it's low calorie and sugar free - but it tastes really good!

Apple Salad

Ingredients:
12 oz. Cool Whip (sugar free) Whipped Topping
One 20 oz. can crushed pineapple in 100% pineapple juice (no sugar added)
One small box (1 oz. size) of Jell-O Sugar Free - Fat Free Instant Butterscotch Pudding
4 Gala Apples (or any type of eating apple of your choice)

Preparation:
Put Cool Whip in a large mixing bowl. Add the entire contents of the can of crushed pineapple over the Cool Whip. Add the small box of instant butterscotch pudding. Mix thoroughly by hand until completely blended. Dice apples and add to mixture. Mix well. Refrigerate at least one hour before serving.

Seriously, this stuff is so good - it tastes just like a dessert, and it's good for you! So, go pick up the ingredients and try it - you won't be disappointed!
